FC § 609.10.1

The owner of a commercial cooking system shall maintain records of any required inspection and other maintenance of commercial cooking appliances, including the replacement of deep fat fryer high-limit controls as required by FC 609.4.1.1.2, and the cleaning of cooking appliance exhaust flues.
